Southern Fried Yellow Squash

fresh sliced

seasoned with salt, pepper, and cayenne - onion added

breaded with corn meal

frying in the skillet
Yellow Squash
Corn Meal
Salt
Pepper
Cayenne
Olive Oil
Slice squash into 1/4" slices. Place in a bowl and add salt, pepper, and a dash of cayenne. Mix well. Add 1 cup corn meal and toss gingerly until all pieces are coated. Let sit for 30 minutes so meal has time to set well on squash slices.
Pour 1/2 cup olive oil into a skillet. Heat until almost smoking. Add squash slices and leave until the bottom layer starts to brown. ONLY when bottom layer has browned should you carefully take a spatula and scraping from the bottom you need to flip the squash so the uncooked side can now brown. Repeat scraping the bottom and turning until all pieces are nicely browned and cooked through.
Grandma always added a little sugar to her corn meal and it's real good that way too

Yellow squash is so good fried. I can't wait until summer when I can get some fresh squash at good prices.

Thanks for sharing the recipe. I have been trying to find a recipe for what my grandma called squash mush. This looks very close to what she taught me to make many years ago. I can't wait to try it.
I think she just added the cornmeal to the pan, I don't remember the squash being breaded in it.
