Fried Catfish

We bought catfish bites which a re boneless. Wash thoroughly with cold water and strain. Sprinkle with cayenne pepper if you like spicy foods.

We use a fish breading bought from the grocery store. Place breading in a bag (plastic or paper) and add fish. Shake well to coat all pieces. Drop into a deep fryer and when they turn golden brown and float they are done.

I suggest serving with french fries, coleslaw, a slice of onion and hushpuppies.
Suggested Beverage: Sweet Iced Tea

Do you have any tips for making fish taste well, unfishy?
I'd love to fry some fish at home, but when I try it always has the "wild" taste to it. Any advice? Thanks.

Soak fish in lime juice to remove the fishy taste. Lemon juice will also work but I prefer the flavor of lime. The flavor is not prominent (to me). I think it allows the real flavor of the fish to shine.
